@merchant121 : No it does not taste soggy. The Frying helps hold shape but we used the store-bought paneer which does not need any help in that department
If you are using home made paneer, you might have to fry/saute a little so it does not fall apart in the gravy.

Well, if you use yogurt, it will not be butter paneer. Cream has a neutral taste whereas yogurt can be tart.

Its a personal preference. You can definitely leave it out. A small amount of sugar tends to balance the flavors.
